Delicious Vegan Gluten-Free Snack or Breakfast Recipe : The Best Banana Hemp Cocoa Muffins
Makes about 6 servings
To make this healthy, vegan, gluten-free recipe you will need:
2 cups gluten-free flour
1 teaspoon xanthan gum if your flour does not contain it
2 teaspoons baking powder
2 teaspoons baking soda
A pinch of salt
2 large overripe bananas, mashed
½ cup of extra virgin olive oil
1 cup unsweetened almond milk
½ cup maple syrup
2 teaspoons pure vanilla extract
2/3 cup hemp seeds
½ cup cocoa powder
- Preheat the ovens to 400oF. Grease a 12 cup muffin tin.
- Whisk the dry ingredients together in a bowl. In another bowl, mix all the wet ingredients. Thoroughly combine all the, wet and dry, ingredients together.
- Evenly divide the batter among the muffin cups.
- Bake until the muffins are browned and a toothpick comes out clean, 20-25 minutes.
