Delicious & Healthy Vegan Candy Bars
Makes 1½ dozen bars
To make these addictive healthy, gluten-free, vegan, candy bars you will need :
1½ cups raw cashews
1½ cups dates, pits removed, chopped
½ teaspoon fine sea salt
1½ cups dark chocolate chips or chunks (70% cocoa content)
½ cup natural almond butter
½ cup maple syrup
½ cup coconut flour
½ cup unsweetened shredded coconut
½ teaspoon almond extract
1½ tablespoons coconut oil
1- Grind the cashews to a very fine meal in your food processor.
2- Add all the ingredients, except the chocolate and coconut oil, in the food processor and mix until a ball of dough is formed.
3- Line a rectangle sheet pan with parchment paper. Press the cashew mixture into the pan. Put in the fridge for 6 to 8 hours.
4- Melt the chocolate and coconut oil together.
5- Remove the pan from the fridge when mixture is firm and pour the melted chocolate on top.
6- Return the bar to the fridge for another hour, until the chocolate is firm.
7- Lift your bar from the pan using the parchment paper and cut in bars. They will keep well in the refrigerator for up to 2 weeks, in an airtight container, and they are also perfect to store in your freezer.
