Delicious raw chocolate macaroons that are rich in fiber, vegan, gluten-free, and super easy to prepare!
Makes about 12 macaroons
To make this easy vegan, rich in fiber, raw chocolate macaroons recipe you will need :
1½ cups dried unsweetened coconut flakes, or desiccated coconut
½ raw almonds or almond flour
½ cup raw cacao powder
½ cup raw organic honey, coconut nectar, or maple syrup
1 teaspoon natural vanilla extract or powder
Pinch of salt
1/4 cup coconut butter
- If you are using almond flour, skip this step. Process the raw almonds in a food processor until they are finely chopped.
- Add all the ingredients in the food processor and mix until a well blended mixture is obtained, keeping a bit of texture.
- Using your hands, shape the dough in mini balls and lay them on a parchment lined cookie sheet. Once all the balls are made, press gently on them to form little discs.
- Place your macaroons in the refrigerator to set.
