Saffron Basmati and Wild Rice - Green to Glass

Delicious wild and wholegrain basmati, or brown rice recipe made with saffron, dates and macadamia nuts, gluten-free and vegan

Makes about 4 servings


To make this healthy saffron basmati and wild rice recipe you will need :


2 packages (250g) of steamed wholegrain basmati or brown rice

1 cup (250ml) of wild rice, cooked

1 cup cooked lentils

5 juicy dates, such as Medjool, pitted and chopped coarsely

1 good pinch of Himalayan or Sea salt, to taste

3/4 cup of macadamia nuts, or blanched almonds, chopped coarsely

1/2 teaspoon of saffron, soaked in 3 tablespoons of hot water, keep the water

6 tablespoons of olive or walnut oil

1 tablespoon maple syrup

1 tablespoon tamari sauce


  1. Cook the basmati rice according to the instructions on the package.
  2. Combine all of the remaining ingredients in a large bowl. When the basmati and the wild rice are cooked, add them to the bol and mix well.
  3. Season to taste and serve warm or hot with a lovely green salad!
