Peanut Butter Vegan Oatmeal with Bananas

For this filling flavor packed creamy vegan oatmeal recipe you will need the following:

2 bananas, blueberries to garnish are optional
1 teaspoon cinnamon
1 teaspoon nutmeg
3 cups unsweetened soy or almond milk
1 tablespoon vanilla extract
1 tablespoon maple syrup
1 pinch salt
1 cup steel-cut oats (gluten free)
¼ cup all natural peanut butter


If you want a dairy-free and gluten free breakfast that will satisfy you until lunch, this vegan oatmeal will surely meet your expectations. You probably already have all the ingredients mentioned above in your pantry, too easy! This recipe is my go to  on cold winter mornings, or when I feel my family could benefit from the extra energy for their hectic days.

  1. First, you cook the oatmeal according to the instructions on the label, then you add the cinnamon, nutmeg, salt and vanilla and stir well.
  2. When your oatmeal is ready, you remove your pot from the stove and gently stir-in the peanut butter and the maple syrup.
  3. Finally, garnish your oatmeal servings with banana slices and blueberries if you like.
