Chocolate Mousse Recipe

4 servings

Ingredients

1 (14 ounce) can coconut milk
1 tablespoon vanilla extract
7 ounces (200 grams) OR 150 grams (for a less sweet mousse) of vegan chocolate (minimum 70% cocoa) chips or chocolate bar chopped in coarse chunks.
1 pinch of Himalayan salt, optional

1 precooked pie crust of your choice

Optional : add 1 generous tablespoon of any nut butter of your choice for a creamier pie

Instructions

1.     In a medium saucepan over medium heat, bring coconut milk to steaming (small bubbles appearing around the edges of the pot). Make sure the coconut milk does not boil!

2.     Remove from heat and stir in vanilla extract and salt Add chocolate pieces, and optional nut butter, and gently stir until mixture is smooth.

3.     Pour into your precooked pie crust and chill in the fridge for 3 hours.

Serve with a generous dollop of coco whip and you can also add some chocolate shavings if you really want to impress your guests.
