Nourishing energy balls made with natural ingredients

Makes about 12 energy balls

Ingredients

390 g (13 oz) nuts of your choice (cashews, almonds, hazelnuts, pecans, etc.). If you wish to upgrade the nutritional value, you can add seeds such as sunflower, pumpkin, sesame, etc. I recommend that you soak your nuts and seeds in filtered water for at least 1 hour before making this recipe.

3 tablespoon of store bought coconut butter or homemade

120g (4oz) dried raisins

60g (2oz) juicy Medjool dates (or baking dates soaked for 1 hour)

1 tablespoon cinnamon powder

2 teaspoons natural vanilla extract

½ teaspoon Himalaya salt (optionnal)

60g (2oz) Goji berries

1/2 cup of raw cocoa powder or nibs

3 tablespoons of honey or maple syrup (optionnal; for extra sweetness)

Energy balls with Aloe gel added and sprinkled with ground pistachios

Instructions

  1. Start by adding all the ingredients to your food processor and blend until a smooth paste is formed.

  2. Taste the mixture and adjust the texture (by adding more coconut butter) or the sweetness (honey or maple syrup) to suit your tastebuds.

  3. Before rolling your balls, put the paste in the fridge for about 10 minutes.

  4. When your mix has cooled slightly, roll into balls, the size of big marbles, with the palms of your hands and place them on a plate. You can also roll them in unsweetened desiccated coconut.

  5. Pop in the freezer for 1 hr, then enjoy. The balls can be stored in the fridge for 1 week in an airtight container or 1 month in the freezer.
