No bake, Nut-Free Energy Ball Recipe

These delicious energy balls are rich in fiber and protein. They are made with Wowbutter (toasted soy spread), rolled oats, coconut oil, maple syrup, hemp seeds, pumpkin or/and sunflower seeds, organic dark chocolate chips, natural vanilla extract, and Himalayan salt. This wholesome snack is perfect for people on the go. These nut free energy balls will feed your inner kid!

Makes about 14 small bites

Ingredients

1 1/2 cups (375 ml) gluten-free rolled oats

5 (75 ml) tablespoons coconut oil

4 (60 ml) tablespoons Wowbutter

1 teaspoon (5 ml) pure vanilla extract

1/2 cup (125ml) coconut flour

2 tablespoons shelled hemp seeds

2 tablespoons raw unsalted pumpkin seeds and/or sunflower seeds

1/4 teaspoon (1 ml) Himalayan or sea salt

3 tablespoons (45 ml) dark chocolate chips (70% cacao or more)

1/2 cup (120 ml) pure maple syrup (or 1/4 cup maple syrup and 1/4 filtered water for a less sweet snack)

Instructions

  1. To make these delicious energy balls, blend all your ingredients, except for the chocolate chips, in a food processor. If your mixture is too dry, add 1-2 tablespoons of water.

  2. When the mixture forms a dough, add the chocolate chips and mix well with a spatula.

  3. Roll the dough into small balls and place on a sheet lined with parchment paper.

  4. Freeze the balls in your freezer for about 10 minutes, until firm.

  5. Enjoy!

  6. You can store your delicious nut free energy balls in an airtight container in your fridge, but I can tell you right now they won’t be there for long!
