Creamy Vegan Dark Chocolate Pudding Recipe

This dark chocolate pudding is not only tasty, it's also a good source of fiber and magnesium. It can be eaten as a snack or as a dessert. Made with healthy ingredients, this creamy and chocolatey concoction will certainly satisfy your sweet tooth cravings!

Makes 4-6 servings

Ingredients

100g dark chocolate morsels (approx. 70% cacao)

1 tablespoon coconut or olive oil

1 medium ripe banana

1 ripe avocado

125ml (1/2 cup) unsweetened coconut milk

1 tablespoon + 1 teaspoon cacao powder

1 teaspoon natural vanilla extract

1 teaspoon chia seeds

Optional for an extra creamy texture: 1 heaping tablespoon creamy almond butter or other nut butter of your choice

Optional : dark chocolate chips or chunks and chopped hazelnuts, pistachios or almonds for the presentation before serving

Instructions

  1. To start, melt the chocolate with the oil, in a bain-marie or in the microwave.

  2. Then, blend all ingredients, except for the melted chocolate, in a food processor until smooth.

  3. Add your melted chocolate to your creamy mixture and blend again in your food processor until your pudding is smooth.

  4. Divide your pudding into 4 to 6 dessert cups and refrigerate for at least 2 hours.

  5. Before serving, decorate your puddings with some chocolate shavings and crushed hazelnuts.

This pudding will keep for about 5 days in the fridge, in an airtight container.
