Makes 2 cups
Ingredients
1 can (540ml) organic chickpeas
2 tablespoons tahini (or replace the tahini with an additional 2 tbsp of creamy peanut or almond butter)
2 tablespoons creamy peanut butter
2 tablespoons of quality olive oil
1 lemon, juice squeezed
1 garlic clove, peeled and minced
1 pinch of sea or Himalayan salt, to taste
Optional : regular or smoked paprika, coarse salt or fleur de sel, pine nuts, Za’atar spice, and extra virgin olive oil for finishing
Instructions
In a good quality blender, combine all the ingredients and blend until you get a smooth, creamy paste. If the mixture is too thick, add a little filtered water (1 tbsp at a time) to make it easier for your blender. Taste your hummus, season to taste with salt and pepper, and blend again.
Transfer your hummus to a small bowl. Add a drizzle of olive oil and sprinkle with a little smoked paprika, fleur de sel, Za’atar spice, fresh chopped parsley, toasted pine nuts or any other garnish of your choice.
Store your hummus in the fridge in an airtight container, it will keep for up to 7 days.
