Raw Chocolate Macaroons
No bake Raw Chocolate Macaroons
Delicious raw chocolate macaroons that are rich in fiber, vegan, gluten-free, and super easy to prepare!
These " hard to resist" goodies are made with almond flour, unsweetened desiccated coconut, raw cacao powder, maple syrup, coconut butter, vanilla extract, and Himalayan salt.
A perfect vegan, gluten-free, polyphenol and iron rich, high fiber, and gut friendly snack!
Makes about 12 macaroons
Ingredients
1½ cups dried unsweetened coconut flakes, or desiccated coconut
½ cup raw almonds or almond flour
½ cup raw cacao powder
½ cup raw organic honey, coconut nectar, or maple syrup
1/4 cup coconut butter
1 teaspoon natural vanilla extract or powder
Pinch of salt
1 or 2 tablespoons filtered water if needed
Instructions
1. If you are using almond flour, skip this step. Process the raw almonds in a food processor until they are finely chopped.
2. Add all the ingredients in the food processor and mix until a well blended mixture is obtained, keeping a bit of texture.
3. Using your hands, shape the dough in mini balls and lay them on a parchment lined cookie sheet. Once all the balls are made, press gently on them to form little discs.
4. Place your macaroons in the refrigerator to set.
5. Enjoy!
Store your macaroons in an airtight container in your fridge or freezer. Eat within 10 days of making them, they will keep for up to 1 month in the freezer.
