Wild Rice Salad with Almonds and Raisins
Wild rice salad recipe
Wild rice recipe with tahini, raisins and almonds rich in fibre, gluten-free and vegan. This rice salad can be served warm or cold, and pairs really well with a nice green salad. Furthermore, the wild rice and roasted almonds add a wonderful crunchy texture to this salad.
Wild rice is an annual aquatic plant found naturally in some shallow lakes and rivers in North America. In terms of nutrition, black rice has many benefits: it’s rich in vitamins B and E, minerals, fiber and antioxidants.
Makes about 4 servings
Ingredients
300 ml black wild rice
2 garlic cloves, peeled and crushed
2 tablespoons tamari sauce
150 ml dried raisins, soaked in water for 2 hours
175 ml sliced almonds, lightly toasted
2 tablespoons tahini
Juice of 1/2 lemon or 1 lime, with 1 tablespoon of its zest
Olive oil to taste
Pepper and salt for seasoning
Preparation
1. Cook wild rice according to package directions, or follow these instructions.
2. When the rice is cooked and the water has completely evaporated, add the toasted almonds, tahini, tamari, garlic, lemon juice and a generous drizzle of olive oil.
3. Drain the raisins and add them to the rice. Mix all the ingredients well. Taste and season with pepper and salt to taste.
Serve warm, but this salad is also excellent served cold paired with a nice green salad.
