An easy to prepare sparkling fruit juice drink. I leave my fermentation at room temperature 12h-24h, and it becomes bubbly and rich in probiotics! You must prepare a coconut water kefir beforehand (recipe below) and then you will be able to transform your favorite juice into a refreshing soda pop alternative!

At the end of the fermentation process, you obtain a naturally carbonated drink: the bacteria in the kefir digest the sugar present in the juice and create bubbles, just like a beer.

A very simple recipe to make at home that’s rich in beneficial bacteria and yeasts.

What is Kefir?

Fruit juice kefir is a bubbly beverage resulting from a malolactic type fermentation. Kefir contains gut-friendly bacteria and yeasts.

A kefir drink is slightly tart and fizzy.

Sparkling coconut water kefir

Ingredients

Activated water kefir grains (water kefir grains consist of bacteria and yeast existing in a symbiotic relationship. They are soft and gelatinous “grains” from a cactus plant. They grow and multiply when healthy and fed.)

1L Coconut water (I like to use Vita Coco coconut water, original, because of it’s mild coconut flavour)

In this video, I demonstrate how to make coconut water kefir. It’s a natural probiotic drink, and the key ingredient for making sparkling, refreshing kefir is activated water kefir grains. Vegan, and gluten-free, this fermented drink is also a great source of beneficial bacteria and yeast.

If you want to add more probiotics to your diet, give coconut water kefir a try. This fermented beverage can easily be made at home!

INSTRUCTIONS

  1. Add 2 cups of coconut water, or more, into a glass jar.

  2. Add 2 tablespoons of water kefir grains. You can add more grains if you want to speed-up the fermentation process (I add about 6 tablespoons, and get plenty of fizz after 2 days of fermentation).

  3. Cover with a coffee filter or cloth secured with an elastic.

  4. Let sit for 24 – 48 hours, the coconut water kefir will be a little fizzy with a slightly tangy flavor.

  5. For a sweeter drink, after 1-2 days of fermentation, you can add a few dried figs (3-6), cover again with a cloth, and ferment for another day or until the figs float at the top of your jar.

  6. Filter your coconut water in a bowl to remove the kefir beads. Store your kefir beads in the fridge in an airtight jar with filtered water and some sugar.

  7. Transfer your coconut water kefir in an airtight jar and store in your fridge. It will keep a few weeks.

Recipe for sparkling juice Kefir

Ingredients

1L juice of your choice (Freshly made or newly opened if store-bought - this will ensure that no invisible traces of mold are present before you make your fermentation)

125 ml (1/2 cup) coconut water kefir

Preparation

  1. Pour the juice into a sterilized or very clean jar.

  2. Add the coconut water kefir and mix well.

  3. Cover your jar with a cheesecloth, clean cloth or a coffee filter and hold it with a rubber band.

  4. Leave to ferment at room temperature between during 12 to 16 hours.

  5. Bottle when the taste is satisfactory (more or less sweet according to your preference).

  6. Keep your bottle at room temperature for 2 hours, or longer depending on the desired taste, to give your drink more effervescence, then refrigerate it.

You can serve your sparkling juice on ice to make it even more refreshing in the summer. Cheers!
