Tofu French Toast and Express Yogurt

This vegan French toast recipe is a perfect substitute of the traditional version made with eggs. A fresh slice of artisan crusty bread, soaked in a mixture of silky tofu and browned to perfection. Start your day off right with this breakfast ; rich in fiber and protein. Furthermore, the yogurt is a wonderful source of probiotics!

Dairy-free and vegan-friendly, this tasty yogurt fermentation can easily be made without special equipment, and only takes a few days to ferment. I leave my preparation at room temperature, and after 1-2 days it becomes rich in beneficial bacteria!

My new favorite vegan breakfast for dinner : French toast, made with tofu, served with pomegranate seeds, blueberries, raw pistachios, maple syrup and a dollop of homemade coco-cashew yogurt.

Tofu French Toast

Makes 6 slices of French toast

Ingredients

1 cup Plant based milk (oat, soy or almond)

300g Silken tofu

4 tbsp. Maple syrup

4 tbsp. Ground flax seeds

1/4 cup Melted vegan butter

1/4 cup Unbleached or gluten-free flour, all purpose

1 teaspoon Natural vanilla extract

1 teaspoon Cinnamon

1/4 tsp. Nutmeg

1/4 tsp. Cardamom

1/2 teaspoon Baking powder

A pinch of Himalayan or sea salt

6 slices of a large round artisanal bread, country or loaf, sliced ​​1 inch thick

Instructions

  1. Combine all the wet ingredients (vegetable drink, silky tofu, maple syrup, butter) in a blender and mix well.

  2. Pour your mixture into a large bowl and stir in the rest of ingredients. Mix everything until you get a smooth texture.

  3. Thoroughly dip your bread slices in the French toast mixture, and coat them completely, one at a time.

  4. Brown your bread in a nonstick skillet heated over medium-high heat. Avoid moving your slice of bread while it's in the pan, except to turn it over and toast the other side.

  5. Serve your tofu French toast with homemade yogurt, maple syrup, fresh fruit or any other topping of your choice/preference.

Coconut-cashew yogurt fermented 24hrs ; dairy-free and vegan-friendly, this tasty fermentation can easily be made without special equipment!

Express yogurt

Yields about 1L

Ingredients

1/2 cup raw, unsalted cashews, soaked 4-10 hours, rinsed

1 can of full fat coconut milk

2-3 tbsp. maple syrup or agave nectar

1 capsule of vegan store-bought probiotics 10 to 50 billion CFU content only (without the shell)

Instructions

  1. Add all the ingredients for your homemade cashew yogurt above to your blender. Mix until the texture is completely smooth.

  2. Pour in a glass jar and cover with plastic wrap or an airtight cap.

  3. Let sit for 24 – 48 hours at room temperature. If you want to accelerate the fermentation process and if it's during the colder months of the year, you can store your jar in the oven (on off mode), light on, door closed. This will create a perfect incubator for your yogurt to ferment and should take about 8-12 hours.

  4. The cashew yogurt can turn out a little fizzy with a slightly tangy flavor depending on the fermentation time.

  5. Once you are satisfied with the taste of your homemade cashew yogurt, you can add 1 teaspoon of vanilla extract, and refrigerate in an airtight container.

Once refrigerated, your homemade vegan cashew yogurt will gain more thickness and keep for several weeks.
